Indian kitchens have long held that oil and butter/ghee are essentials to a delicious dish.
But is that still true? Thanks to conscious lifestyle changes, people are reducing their intake of saturated fats. Yes, you guessed it right: We are talking about zero-oil cooking, which has become increasingly popular these days.
People are now realising that they don't need oil and butter to make food tasty. From fancy new pans to simple water tricks, cooking without oil has become easier and healthier than ever! Here is why this trend is taking over kitchens everywhere.
The biggest reason is health. Oil is very high in calories. Even healthy oils, such as ghee, become unhealthy when overheated. Cooking without oil can help you protect:

In the past, cooking without oil meant that food would stick to the pan and burn. But advancements in kitchen equipment have fixed that problem. To solve these problems, we have:
Unlike traditional non-stick pans, modern ceramic pans do not release toxins and are coated with silica-based gel (derived from sand). This means you can fry an egg or your regular veggies and it will slide right off the pan without too much of oil. They are easy to use and even easier to clean.
Steamed food was once considered "boring" and was reserved for dishing up when you were sick. Not anymore! New electric steamers not only cook food very fast, they use hot steam to lock in the colour and the vitamins. Steamed carrots or fish stay juicy and bright, making the meal look and taste much better.
This is a simple trick that anyone can do. Instead of adding oil to your pan to cook onions or garlic, use a few spoons of water or vegetable broth.

If you think no oil means no flavour, think again! When you don't use oil, you increase the use of herbs, spices, lemon juice, and vinegar. These give your food a "punch" that oil often overshadows.
Think of it this way: Oil coats your tongue and blocks flavour. Without it, the spices hit your taste buds directly.

You don't have to stop using oil 100% of the time to see a difference. Many people are just "cutting back." They might use a steamer for the main meal and reserve a small amount of high-quality olive oil to drizzle over after the food is cooked. This way, you get the nice smell of the oil, and its nutritional benefits, without the heavy calories that pile onto your food during frying.
Zero-oil or minimum-oil cooking is getting popular because it is a conscious choice you can make to improve the quality of what you eat. It’s not about "dieting" or eating food that tastes like cardboard. It’s about using modern tools, fresh water and a new mind-set to make meals that are clean, colourful, and delicious.
Next time you reach for the bottle of oil, try a splash of water instead. Your body will thank you!
